En apprentissage de libraire à partir de 1642 à Francfort puis à Bâle. Reçu membre de la corporation de l'Échasse le 28 fév. 1648. De 1648 à 1652, il travaille en association avec l'imprimeur-libraire Johann Philipp Mülbe, son oncle par alliance. Rachète l'imprimerie des héritiers de Wendel Rihel. Après la mort de l'imprimeur-libraire Johann Friedrich II Spoor (1662), il épouse la veuve de celui-ci. Membre du conseil de ville de Strasbourg à partir de 1675, il occupe de multiples fonctions municipales, dont celle de commandant de plusieurs compagnies de la milice. Décédé à Strasbourg en mai 1700. Une publication au moins porte encore son nom ("Josias Städel senior") en 1701. Son fils, Josias II Städel ("junior"), reprend l'entreprise jusqu'à sa propre mort, en 1717
